Breakfast Sausage Latkes

We thought of spicing up some good old potato pancakes or 'Latkes' with a our Breakfast Sausage Mix.  The result--a savoury and unbelievably flavourful twist on an age-old dish!

For this batch:

150g of BABz Breakfast Sausage Mix

 

  • Half of the water BABz instructions call for. So that’s really 7/8s of a cup (hard to get your mind around–just eyeball 1/2 of 3/4s of a cup. I added in a bit more thinking I’d need the moisture. I was wrong.
  • 3 medium size golden potatoes
  • 3 tablespoons of oil (I used avocado)
  • 1 small zucchini
  • 1/3 cup of white flour
Prep:
Shred the potatoes and put them in cold water in a pot and bring to a boil (parboil). As soon as the water is boiling take off the heat, put the potatoes in a strainer and run cold water over them (mostly to make them manageable when mixing in).

 

Shred the Zucchini and add to mix. Then add in the potatoes. Add in 1 to 1.5 tablespoons of oil. Mix. Then add the flour and mix thoroughly

 

Add 1 T of oil to your non-stick fry pan, electric fry pan or griddle. You’ll want higher heat (350 or 400). Once the oil has dispersed (good test–sprinkle water if it pops you’re good to go!).
 
Scoop the mix using a spatula and press down. If you have a bit of gumminess on the spatula, wipe and add a bit of oil. I didn’t–just removed the excess and put back in the bowl.
 
Fry each side for 5 to 7 minutes. Watch for burning! You’ll want a crispy brown look. The thinner the pancakes the more crispy they should get.
 
Remove from fry pan and place on paper towel to absorb excess oil.
